HoloLens Data Visualization does not store any of your data models. We don't trasnfer or store any data modles outside your device

No, application doesn't share any of your information with any Third Party.

Can I remove the data models?

Yes, you can remove all the data mdoles by removing the HDV-GraphDefinition1.json, HDV-GraphDefinition2.json, HDV-GraphDefinition3.json, HDV-GraphDefinition4.json files from the pictures/Camera Roll folder of your device
